Equipment

  • Cutting board
  • knife

Ingredients

  • 1 tbsp onion - red or yellow finely chopped
  • 1 tsp jalapeno finely chopped
  • 1 tomato medium-sized, chopped
  • 2 tbsp cilantro leaves chopped
  • 1 large avocado ripe, roughly mashed, not smooth
  • 2 tsp freshly squeezed lime juice
  • 1/4 tsp salt or to taste

Instructions

  • Add chopped onion, cilantro, tomato and jalapeno to a bowl and mix
  • Add roungly smashed avocdo, lime juice and salt. Don't overmix, it tastes better when the avocado is still chucky and not completely smashed
  • Taste and adjust ingredients to suit. If I don't have tomato, I just leave it out and it tastes great with or without tomato.
  • Enjoy with freshly oven toasted corn tortillas or as a side with burritos or tacos or your favourite sandwich

Notes

The main way to make this recipe for Guacamole taste it's best is to get that perfect avocado - not too green and not too ripe.
To do this, the avocado should have a brown skin but the skin should not be loose from the flesh.
Squeezing the avocado is not recommended as it will bruise but a gentle hand around the avocado can give you an indication.
If they are too green, keep them above the refrigerator - I find the warmth from the running fridge helps to ripen them faster than room temperature.
If you need to keep your avocados from ripening too quickly, then keep them in the fridge.
I never add mayonnaise or sour cream to guacamole, the ripe avocado adds all the creaminess you need.
