German Hazelnut Cake
This cake recipe is from my German mother-in-law and it is easy to make, moist and delicious!

- 6 large eggs
- 3/4 cup granulated sugar
- 1 packet vanilla sugar
- 31/2 cups hazelnuts 400 g
- 21/2 tbsp dried bread crumbs
- 2 tsp baking powder
- 1 cup chocolate hazelnut spread optional
Preheat oven to 350F and line a 9 x 4" loaf pan with parchment paper
grind hazelnuts in food processor
add bread crumbs and baking powder
beat eggs with sugar and vanilla sugar until frothy
fold together egg mixture a hazelnut mixture
add to a 9x4" loaf pan lined with parchment paper
place in a preheated oven for 55 minutes or until toothpick comes out clean
cool on a wire rack for 15 minutes then remove from pan and cool completely
ice with chocolate hazelnut spread if using
